A visit to Casa Botin, claiming to be the world's oldest restaurant (founded in 1725), is like traveling back in time. Located in Old Madrid, this spot was a favorite of Hemmingway. The open kitchen still has an 18th century wood-burning oven that cooks the house specialty of Castilian roast lamb. It has four dining rooms with copper pans and oil paintings surrounded by exposed beams. Live regional music, performed by student minstrels in black coats, fills the air after midnight.
